    Spot on, Emeril. I'm accustomed to soaking catfish in milk first, but soaking it in the lemon mixture really developed the sweet flavor of the catfish. I especially appreciate your sharing your Essence recipe, as I'm off salt, but with all the other rockin' flavors in the Essence, I don't miss it, as my palate has changed. What a treat - Thanks, E!!!

    Emeril, you are a genius. This is the most incredible tasting fish, EVER. I will try this marinade on other types of fish...but it was awesome with catfish.

    I followed to a T and it was not only fast and easy, it was catfish like I tasted while in New Orleans. My mother, who is a very picky eater, even enjoyed it! A bonus is that I have leftover essence to try on chicken and another fish. Thanks Emeril!

    This was the first Emeril recipe I've tried and I was concerned that it would be too spicy or too difficult. It was absolutely perfect and easy! I did use whole wheat flour instead of cornmeal as that's all I had on hand and it was still delicious. My mother said it was magnificent and better than any catfish she's had in any restaurant. My dad said, "I don' t really care for fish usually, but I'll eat this anytime"

    So nice to find a recipe that both my parents love as they're food tastes are polar opposites. I didn't know if I would like the cajun flavor or even if I would like catfish, both firsts for me. I loved it and could eat it every night.

    I can usually do with or without catfish..

    Let me tell you...this was fantastic. the recipe was easy to follow and oh so tasty! I have a hard time pleasing everyone in my family with one meal..but this one fit the ticket!

    This is a very flavorful recipe. We made our own Essence, which is great on many things. Our catfish may have been unusually thick, but we needed a couple extra minutes on each side.

    I am not a big fan of catfish, but my husband loves it. He is a very picky eater. I made this the other day and we both loved it. It was easy (I don't know why it is in the medium difficulty level. I will definitely make it again. He has already put in another request for it!
