4 servings

  • 1 (3 1/2 to 4 pound) chicken, halved, with the breast bone, back and first two digits of the wings removed
  • 1 tablespoon kosher salt
  • 2 teaspoons ground white pepper
  • 2 tablespoons olive oil
  • 2 tablespoons softened butter
  • 1 teaspoon minced garlic
  • 1 teaspoon chopped fresh thyme leaves
  • Preheat the oven to 400 degrees F.

  • Season the chicken on both sides with the salt and white pepper. Set a 12-inch cast iron skillet over high heat and add the olive oil to the pan. Swirl the pan to evenly coat and lay the seasoned chicken halves, skin side down in the pan. Sear until golden, about 3 minutes and place the pan in the oven. Cook until the chicken is fully cooked through, about 17 to 18 minutes.

  • While the chicken roasts, combine the butter, garlic and thyme in a small bowl and use a fork to combine. When the chicken is removed from the oven, turn over with a spatula and place on a platter. Spread the herbed butter over the skin of the chicken halves and serve immediately.

very easy and delicious as well!! item not reviewed by moderator and published
Very easy to make and delicious. Any recipe with garlic and butter is alright in my book. I usually make it using thighs and I used ground thyme like the other reviewers. item not reviewed by moderator and published
Delicious! Super easy and the boneless chicken breast came out perfect. I didn't have fresh thyme so instead used dried ground thyme and it was still very yummy. The taste of this recipe reminded me of shrimp scampi and is definetely a keeper!!! item not reviewed by moderator and published
I can't believe there's only 4 reviews about this Great and Simple recipe! The only thing that I did differently was use dried seasoning instead of fresh. I usually avoid cooking chicken breast because the meat is so easy to dry out, but THANKYOU EMERIL so much for sharing your knowledge:) I still can't believe I cooked this chicken. The meat is juicy, tender and full of flavor and it's so simple to make. Thanks again!!! I am no longer avoiding chicken breast. I am so stuffed that I'm going to have to rest a bit I just had to add on to the review about this overlooked recipe. DON'T HESITATE, JUST COOK IT, TRUST ME!!!!! item not reviewed by moderator and published
Simple, Fast, not much prep, and quite delicious. It needed a couple more minutes in the oven to not be rare, but otherwise, a great recipe. item not reviewed by moderator and published
This was easy enough for a quick family dinner, but I'm putting it in my "good enough for company" file. It was definitely a hit! item not reviewed by moderator and published
That was so easy and so delicious!! My oven took several minutes longer so the meat thermometer came in handy. This will be a regular in our house. Thank you Emeril! item not reviewed by moderator and published
