    I'm a retired contractor who was lucky enough to build several of M's restaurants. He introduced me to fine dining. I now have time to attempt cooking. I made this recipe last nite and followed all directions except I let the meat merinate for 5 hours and the salsa sit in the frig for 5 hours, simply due to my poor planning. This rascal was killer. Everyone cleaned their plates and wanted more! I do recommend doubling the salsa! The rice was just great! Together the meal was matched perfect. M, what wine should I serve? I'll do this one many times in the future.

    Made this for company the first time I ever made it and it was a hit! It has now become a family favorite. I do sometimes marinade the pork a bit longer. Mango salsa is the best and really brings it all together - I usually double the Mango salsa recipe because everyone loves it so much. Be careful not to add any more rice vinegar than it calls for though. I've used other pork tenderloin recipes but this is by far our favorite!!

    My husband and I LOVED this dish....I followed the recipe exactly, and all three components- the pork, the salsa, and the rice pilaf- were excellent. Even better was the fact that the ingredients I had to buy (the ones that weren't already in my pantry only cost me about 15 bucks! It was also very healthy and nutritious. One of the most delicious and satisfying dinners I've ever cooked.

    This dish is wonderful!!!! Made it for a couples luau shower for about 80 people. It was a hit. Very tasty and colorful. A definite repeater.

    This recipe was fairly easy to make and quite flavorful. The mango salsa really does make the meal, and it looks beautiful too - so colorful! I would probably marinate the pork a bit longer next time to give it more lime flavor. Didn't make the pilaf (made black beans and rice instead but that sounds great as well. I will make this again.

    The pork tenderloin was so moist and flavorful. I marinaded the pork for one hour, it was perfect with the mango salsa. The salsa was a great combination of spicy and little sweet from the honey. My tenderloin took longer than 20 minutes, but kept checking it with a meat thermometer. I cheated and made rice pilaf from the box, it was a weekday meal, but it was so worth it. This is a definite repeat.

    All of the elements of this dish were great. Very tasty, nice mix of flavors, I was very pleased! I did change the cook time for both the tenderloin and rice to 375 so that they could cook together, and cooked the tenderloin to 155 as my husband wont get near undercooked pork...old habits die hard. I also subbed a few dashes of hot sauce for the jalepeno, due to the salmonella scare they are unavailable in my area. Last change I made was to refrigerate the salsa for a couple hours rather than leave it at room temperature as I thought the cold/hot added just one more contrast. Will make again...this is much easier to make than it may seem for the amount of ingredients and length of the recipe, give it a try!

    My Godness, this was incredible! Bought a pork tenderloin from Costco, cut it in half before marinating. I did the whole meal exactly as written, and it was amazing. My family thinks I am a rock star!

    I followed this recipe exactly for the pork, the rice and the salsa. All were delicious.

    The pork was good but didn't derive as much flavor from the marinade as I would have liked.

    The rice was fabulous and would serve well with most recipes.

    The mango salsa made the recipe. I will use it as a buffet salsa with many menus.

    The nice thing about Emeril's recipes is that you can always count on the specified cook times and instructions being exactly right.

    My family really enjoyed the meal and would be pleased to have it again, but it was defintely not one of their "Emeril" favs.
