    So I read the reviews, and also looked other recipes. After looking at Giada's recipe, I have decided to combine the techniques.
    i pretty much followed Emeril's recipe, except that I did not cook the veggies as long, then I baked them (including the tomatoes with olive oil, salt and pepper, and italian bread crumbs.
    The result was wonderful, the dish was smooth and very sweet, and the dish was not bland at all, because the veggies were roasted... definitely a 5 star dish, with some tweaking :

    This is a GREAT recipe. So light and delicate. The changes I made were minimal. I substitued frozen corn for the peas, added 2 T. of lemon juice and cut the extra-virgin olive oil drizzle down to 3 T. instead of 4. Also, if you grate your own parmesan with a coarse grater, it's very complimentary to the sweetness of the veggies.

    I thought this was very light and tasty. I added broccoli, chicken and red peppers and left out the asparagus but the outcome was still great. Will make again!

    Very quick and easy. Even my daughter, who is very particular about what she eats, loved it.
    A great way to take advantage of seasonal, plentiful veggies.
