Really delicious. I whipped up some fresh cream for the topping and skipped the compote but I am dying to try that too. You can't go wrong with this recipe:

I haven't made the pecan waffles yet, but I recently prepared the fruit compote -- it was delicious! I used an 8 oz. package of mixed dried fruit (so I only used 1/4 quarter of the amount called for in the recipe and then used half of the seasoning mixture. The extra liquid helped the dried fruit to soften and plump up and the sauce gave it a sweetly spicy flavor. I think this compote would also be excellent with pound cake or vanilla ice cream.

These waffles rock! I made them as directed except for a couple of minor alterations to make them more heart-healthy and they came out great. The fruit compote is an additional treat. I only used 1 lb. of fruit but used the full amount of liquid and spices. It came out beautifully fork-tender. I didn't have any whipped cream so we put fat-free vanilla yogurt on the compote. My daughter enjoyed the waffles alone with butter and maple syrup. We will enjoy the leftover compote for dessert. Thank you, Emeril!
