    We made this dish the first time and fell in love! It is now a frequent in our house - even my kids will eat this one! There is not one thing I tweak or change about it other than the dicing of the veggies. This recipe would take FOREVER if you made the little pearls. Just dice them fairly small and you get the same effect.

    What a tasty dish. It's easy and fast, especially if you simply dice the vegetables. It's also beautiful. I added a small ladle or two of the pasta water to the combined dish in the saute pan so that it had a little more moisture. Just enough to coat the bottom of the pan, then let it cook down for less than a minute. Amazing. This is sure to be a keeper! Thank you Emeril!!

    I make these vegetables with and w/o the pasta. Rave reviews. The little pearls are adorable, different and delicious. Now that I have the idea I use other vegies too like yellow beets.
    I got the pearl maker at sur la table.

    OK...I cheated and diced the veggies into teenie, tiny pieces, but the taste was all there. So good!

    I really enjoyed this meal. Not too heavy, even though I added a bunch of diced chicken smothered in olive oil, thyme and garlic. Overall a little time consuming, but just cut up your veggies instead of making them little balls. Worked out well and would definitly make it again. So many possibilities!!
