Yep - be very careful with the lime. I made a double-batch for a party and, even using one large lime, it still seemed to overpower the flavor. Added a little cilantro and...voila! Those fajitas are going to be great tonight!

WOW - as everyone has said previously too much lime. I wish I saw the reviews before making this recipe. I noticed that other recipes call for 1 or even 1/2 of a lime. I ended up straining the whole thing and then added a little olive oil. Also, I love garlic but I do believe there is a little too much in this recipe - it's really all you taste - not a nice blend of flavors. Next time, 1/2 of a lime and 1/2 the garlic.

Too much lime. I used 2 fresh limes and it was too much. Next time I will only use 1 lime.

Why does Emeril add garlic to everything?? Recipe was fine until you ruined it with garlic.
In Mexico, garlic is never used. In Texas and California, garlic is rarely used.
Garlic seems to be used in areas without genuine Mexican food!
