    Very easy to make! I used a food processor for the onions, jalape?o, cilantro and garlic which was fast and made them all the same size. We like hot so I used the full amount of jalape?o and it turned out great. Delicious with a kick. Will definitely make again

    I have had this condiment ordered many times from restaurants but wasn't really able to enjoy it because it was made too hot. Well, thank you Emeril and all the many people who tried and commented on this dish. I can finally enjoy this dish to my liking (homemade style. I am sure you all have read the other comments and I suggest you start with 4 Roma tomatoes, half a onion (briefly soaked in vinegar and rinsed then add the garlic, salt, cilantro and pepper to rough taste. I use a very minimal amount of Jalapeno, I don't like mine spicy but it is a necessary ingredient. Also don't be afraid of the 2 limes. I read the comments and 1 lime was good (tart But to my surprise after slowly adding the second lime because it was dry, it burst the flavor of the other ingredients. Again don't skimp on the lime. I loved this dish. And now I can have it to my liking.. Thanks Emerl

    You can do so much with this recipe. Have to remember that a "recipe" is just a guideline. You can adjust to your taste and you don't have to use exact measurements. I doubled this batch for a Grilled Steak Fajita Salad and used 2 tomatoes, 2 small sweet peppers, 2 cloves of garlic, fresh cilantro, lime juice to taste (about 3 1/2 tablespoons and seasoned with schichimi to control the spice. Let it marinate a few hours and fantastic!

    My fiance and I were looking for a simple, but tasty and authentic pico de gallo, and this is it. We made this recipe with roma tomatoes and ate the whole recipe in one sitting! It was so addicting, we made a double batch the next night! Very easy, fresh, with a little bit of a bite, because, after all, pico de gallo means "rooster's beak".

    I agree with the others. Use 1 lime not two, but I am not a citrus lover. I thought 1 lime was perfect just the right amount of citrus. if you would use two you wouldn't be able to enjoy all the other flavors in the recipe..

    I made this and made a few adjustments, I reduced the amount of garlic as the others had done and I added a few black olives chopped.....This was great. Served it with chips and Ropa Vieja.
