The rice is a little sweet as others have said, but it is delicious! If I make it again, I would use a little less sweetened cream of coconut and a little more bell pepper.

Very good! Like the last review, they all go well together! I thought the rice was a little sweet. Next time I plan to omit the coconut cream for just coconut milk. Very yummy dish though, and a really nice colorful presentation!

Rice on its own is a little sweet and the fish on its own is a little bland, but together the fish, salsa, and rice taste really great!

This is so tasty and flavorful. I used Emeril's Bayou Blast seasoning on the fish, seared in 1 T butter, 1 T oil in a pan, then added the vegetable broth and simmered for 5 minutes and it turned out perfectly. I didn't have fresh mangoes, so I used the ones in the jar that are in the produce section. I couldn't find the sweetened coconut cream, but the rice was still great without it. Didn't toast the coconut either; husband not coconut lover, but he still loved the rice! Super yummy!!!!

use it FRESH on white flesh fish! i left out the bell and added peaches but this was my starting point and i thought it was fantastic. great idea for something new with fish. thanks!

Just couldn't miss the fact that the Coconut Cilantro Rice recipe does not call for cilantro. Does anyone check these recipes?

Though I used salmon instead of grouper, the salsa and the rice were really, really good. My husband loved the salsa on the fish, and the coconut rice made a great companion to it
