    I doubled everything and added a little ckn broth...still didn't seem to be enough.

    I put my mushrooms in a mini-chopper with onions, a bit of olive oil, and parsley. This made a paste, which I spread on top of the chops and topped with mozzarella. Also, to simplify, I used frozen roasted red potatoes (Alexis brand. Great dinner and so easy!!!

    This is a great dish if you're on a diet, but if not I think that the fattier alternatives taste much better.
