    I'm not much for sweet potatoes but my a few months ago, Supper Club had a Louisiana Theme and I found this in one of Emeril's older cookbooks. GREAT flavors, very rich. I skipped the sugar cane and it was still fabulous. I came on the site tonight to find the recipe to make tonight for dinner

    Good flavor, right combo of sweet, spicy and salty. I didn't have the green onions and I think that would have added a lot to the flavor. Didn't have pure cane syrup so added a combo of watered down maple syrup. Sauce was too thick for me and there was too much of it. Took more time that I would have liked to puree the sweetpotatoes in food processor.

    Next time I'll use the green onions, pure cane or Caro syrup, canned sweet potatoes for easier pureeing in the processor & maybe some sweet potato soup (see the health food aisle in the store to thin the sauce. Or make some rice or garlic bread on the side to soak the sauce.

    Great!
    This recipe seemed a little weird at first, but it really came together.
    Was such fun to make and the result was a fantastic combination of flavors.Very hearty and satisfying not to mention beautiful in presention.
    Took some to work and those corn-fed mountain gals 'bout ate their fingers off.

    Grant it I'm not a big gravy person, I think it would be better on roast beef, not pork chops.

    Typically with a recipe with so much gravy, you can make mashed potatoes or rice to soak up the excess. What do you do if the gravy is sweet potatoes! I think that if I was to make this recipe again, I would reduce the amount of gravy and no soak the pork in it to finish. It smothered the meats taste and presentation.

    I was very surprised that I didn't like this recipe. It sounded like the perfect blend of sweet and savory but the overall flavor was bland and simply tasted terrible. It was a waste of good pork and sweet potato. I give this a major thumbs down

    We enjoy pork chops and this is a fantastic new style; we'll definitely do it again! Used canned sweet potatatoes (pulsed in a food processorto save time, and dark corn syrup since we couldn't find the Pure Cane Syrup. Served it over rice with a side salad for terrific after work dinner. While great, we may use chicken stock in lieu of the water next time.
