Well, Emeril did it again with this one! I took pork chops and cut them into medallions. I did not have brandy, so I used 4 Tablespoons of Moscato wine in place of the dry white and the other liquor. It was fantastic. My husband loved it!

This sauce is outstanding. I was browsing for a recipe for pork medallions and I had a couple pears so this was my choice. The pork medallions were very thick so I added enough white wine to bring the braising liquid up the sides of the medallions. I braised them a good while and reduced the sauce with the pears, The pork and pears were excellent and the sauce really pushed the dish over the top. Definitely will make this again. Bravo, Emeril!!

I really enjoyed making this dish, I did make a few personal changes like instead of medallions I used diced pork, but that's about all.

This was excellent! I kind of cheated by using canned pears, dried ginger & chicken stock with some red wine and tomato paste, rather than making the dark chicken stock from scratch. But the favors in this dish were all excellent. Next time I think I will try it with all the regular ingredients it calls for. With a salad a very easy and impressive dinner for a dinner party!! I think I would make more of the sauce next time...guess you can never have too much sauce!!

I only made the spaghetti squash portion of this recipe and it was fantastic. I will make this over and over again.

I am a new home cook so that is probably why this came out mediocre. Emeril's recipes are never mediocre so it must be me!
The spaghetti squash came out delicious but I think I goofed on the pork chops because if you read the ingredients, they are absolutely mouth watering. The flavors should have been delicate and more decipherable. I couldn't pick them out really. I recommend more experienced cooks attempt this recipe. It was a little beyond my abilities.
