Ecellent! We used one 7 lb pork shoulder (boston butt. It cooke di nthe oven at about 225 for 9 hours. We had a ton of sauce left over, i think you could go with at least 1/4 the sauce if not less.

This recipe is fabulous; absolutely delicious and everybody loved it-including my daughter that doesn't eat red meat (don't tell PETA. The hardest part was finding the pork shoulder in the supermarket, they don't always have it. Makes great leftovers too (on a hot dog.

As always, Emeril's recipes are "TOP NOTCH". Made this using a pork shoulder (fresh picnic for Labor Day, in my Weber grill. I followed the directions up to where the meat tested at 180 degrees - about 5 hrs, then moved to a slow oven to finish it off. Wonderful pulled BBQ, and fantastic sauce. We'll use the sauce as our basic sauce from now on.
