    Wow! This is sleeper hit! I love the spicy lemon and mint combo. I suggest adding 3xs the amount of rice.

    I made this in the crock pot instead of on the stove top. I needed to cut the recipe in half based on the amount of chicken I had. I might have mis-measured the lemon and mint because I could barely taste those flavors. Over all 2 out of 3 people in my house liked it and true to Emeril's style, this soup had a "BAM!" to it, thanks to the red pepper flakes. I'd like to try making it again to see if I can figure out how to bring out the lemon and mint some more.

    My Fiance doesn't typically like homemade chicken soup. Since I'm fighting a cold and craving comforting broth, I had to come up with a way to make him excited about eating chicken soup. Well this recipe was it. He loved it. And it was sooooo easy.

    I just used left over chicken breast and only used what I already had on hand. I didn't have celery so I simmered the broth with kale as a substitute. Instead of omitting the onions/kale mixture, I saved, seasoned and served on the side. The lemon, mint and cayenne combo make this soup delicious.

    With a couple of minor tweaks, this is a fantastic soup! The flavors are light and refreshing, which makes it a nice soup to serve even in the warmer months. I cook the chicken and rice separately for a clearer, less starchy broth. I saute the onion, garlic and celery until softened, then add 2 quarts prepared chicken stock or broth. I add the 1/4 teaspoon red pepper flakes to the broth for a hint of heat and prepare the rest of the recipe as specified, but add 2 cups chopped spinach with the lemon and mint to add a bit of color. Before serving, check the flavor. You may need to add a bit more lemon juice or mint. Definitely a family favorite!

    When I made this soup I noticed all the oil on the surface so I chilled it over night and removed the oil. I thought the the flavors although good lack any boldness. I evenually added some hot sauce to it to give it some character.

    I added extra rice and halved the recipe, but the concept itself was very good. It also helped me use up some fresh mint and leftover chicken.

    I did enjoy this soup, however it was lacking in some areas. First of all it was very greasy. I would suggest making it the night before and then skimming fat the next day. It could also use more rice and seasoning. It was a bit bland.
