Easy and delicious! We've made it several times and always make 3-4 batches and freeze it for an easy meal. Just make sure not to add the cream until ready to serve ~ it turns sour rather quickly!

This was a first time making a potato leek soup and the result was excellent. The soup has a richness and full body not always found in a potato soup. It was good even before I added the cream. It takes a little effort, but the steps are easy enough and the result is well worth it. We loved it.

This is one of the best soup recipes I have ever made. You have got to try it, especially if you are unaccustomed to using leeks in your cooking.

For the spice pouch, I use cheesecloth I bought in the craft department of my local Wal-Mart. It worked just fine.

    This recipe is a keeper!

Not a bad recipe but certainly not up to standard. I have used many of Emeril's soup recipes and always found them exceptional. Unfortunately, this isn't one of those.
