    I used to eat potato and leek soup as a child, my Grandmother made the best soups in the world. I have not had it in years, and decided to give it a try, as I myself have never had the opportunity to make my own. I used Emerils recipe, and only made one change to it, I did not puree it. My family told me it was OUTRAGEOUS! Also said Emeril would be proud. I think my Grandmother would be proud.

    I didn't add the cream and this soup was still tasty...probably better with the cream ofcourse! It is a bit heavy tasting and needs a few drops of lemon juice to perk it up.
