Everyone loved these cookies. Since the first time I made them, I keep getting requests to make more. I've also dipped them in peanut butter for those that couldn't eat the chocolate.

I really liked the cookies, they turned out great. The taste is good, and the potato chips add an interesting texture that most people can't quite put their finger on when first trying them.
My only issue was the chocolate covering. I made it according to the recipe and for my taste, it was too "wete" and didn't set up as well as I would have liked.
I will make these again (they were a HUGE hit but will change the cream/chocolate ratio to be a bit drier. I'm thinking 4 oz chocolate to 1/4 cup cream, instead of 1/2 cup cream.

crisy shortbread like cookies. very quick & easy to make, without alot of ingredients. these will be a regular in my cookie recipes.
