I have been looking for a recipe like this for awhile...Potato Leek with out massive amounts of FAT, but still tastes good! Well, it isn't good...it's GREAT! Love it!

Made this last night and it was wonderful! Reminded me of french onion soup. I used a potato masher to thicken it up which was nice because it left some chunks for texture too. I also used bacon, no pancetta. For a garnish I used store bought potato sticks, I think they are sometimes called 'pic nic sticks?' They come in a canister and they added some crunch and fun to the soup! ; I will definitely make this again!

Very tasty! Next time I am going to use more potato's. I made the mistake of saying four servings?? Thats not much.. and I doubled up. Its more like 6-8 servings. It is very tasty though.. I added a little heavy cream to each bowl when i served it, and that made it lighter and creamy! LOved it!!! The garnishes are great too : Enjoy!

Great soup! Lot's of flavor. I used milk instead of cream and it turned out rich and creamy.

My only suggestion would be if you have a small family of only 2 or 3 and don't enjoy leftovers then I would cut the recipe in half. It was delicious but it made entirely too much for just me and my husband and we had so much leftover that we couldnt finish it all. Otherwise it is definitely a keeper!

for those who may be a little curious as to why other reviewers mentioned garni, they are referring to another of Emeril's potato leek soup recipes. that particular recipe contains not only a garni, but also cream. so it's rather different than this one. for a lighter recipe, you can't go wrong with this take on potato leek soup! delicious.

go to a kitchen store and buy a tea baller with a handle that you can squeeze together to open and close the ball. Put your garni ingredients into the tea baller and just toss into whatever you're cooking. When done, clean it and reuse.
