    I'm glad I read through all the comments because I think Alison was correct that the recipe meant to say more than one potato for the whole recipe. Still, what a great recipe! Crispy on the outside.. creamy and delicious on the inside!

    The basic recipe is fine however you should use more than one potato, less lemon and it is best if you grate the potatoes without the onion, rinse and drain WELL then add the onion and other ingredients. Also a really great addition to this recipe is grated parmesan, gives a little extra flavor and texture.

    We really loved them! My husband had eaten potato pancakes for breakfast several times at a restaurant that served a "Denver Type" mixture (chopped green peppers, onions and ham on top and then topped by an egg. I did this and it was delicious, and then for a snack this afternoon we had them with applesauce, both were super duper yummy. Only thing different is they needed a little more cooking time, potatoes seemed not quite done in the alloted time. Loved the flavors!!

    I soaked the shredded potato in water with the lemon juice to keep the color from turning on the potatoes, doubled the recipe, and increased the cooking time. I was able to get 4 VERY YUMMY potato pancakes out of it!

    This was a fantastic side dish. I served it with our Oktoberfest meal, (served with Guy?s Braised Red Cabbage and his Apple Ginger Pork Chops. The pancakes were the hit of meal. I am not a big fan of potato pancakes and I LOVED this one. Will definitely make it again with this meal and others. It is fast and easy to make. The meal took about an hour to make and the pancakes were easily done in 20 minutes or less. .... Oh yes, if you have never tried it with applesauce.... do so..... the combination .... though it sounds strange to me was great.

    The pancakes were good but what's up with the lemon?when i grated the potatos they turned gray.The recipe should of said to put the grated potato right away in COLD water,but once i changed the recipe A LOT it was great.

    I think there's a mistake in the ingredients - should be 1 lb potato, not one potato. Also the lemon is there to preserve the color, but if you prepare the latkes right away the batter will not turn grey. I didn't care for the lemon flavor at all, but it is a good, basic, potato pancake recipe. Also added some chopped parsley to the batter.

    I doubled the recipe (except for the lemon.. I used half a lemon and didn't find it to be too lemony or sour and used crushed cornflakes instead of breadcrumbs. The pancakes turned out GREAT!!! DELICIOUS with applesauce and/or plain yogurt!! Definitely will be making them again!

    I love potato pancakes, especially the ones served up at our local Jewish temple. My husband and I both thought these pancakes cooked up beautifully, but neither one of us was fond of the lemon. I will try them again with 1 Tbl. lemon juice, or perhaps with none, as a previous reviewer had done.
