    I thought this was a really good soup, however, the onion was a bit overpowering to me. Perhaps it was the onion i used? I really like onions so I'll make this again with only half an onion.

    I made this soups as is and what a hit! It was easy to make and had so much flavor. Emeril, thank you for the best recipes that are doable for the full time Mom.

    I loved this soup and the consistency was great. I added a little cheddar cheese and sour cream to make it a "loaded" potato soup. Highly recommend! It's key to sautee the onions in the bacon grease!

    I was looking for a simple, creamy potato soup- and found it here! I didn't use bacon (didn't have at the time and used scallions (which I had an overabundance of... and it worked out great. I didn't puree all of the potatoes, but smashed them with a masher, leaving them lumpy for some consistency. IT WAS DELISH!
