Ingredients
- 2 cups fresh horseradish, peeled and grated
- 1/2 cup white vinegar
- 3 tablespoons shallots
- Salt and white pepper
Directions
In a sauce pot, combine the horseradish, vinegar and shallots together. Season with salt and pepper. Bring the liquid up to a boil and reduce to a simmer. Simmer the horseradish for 4 to 5 minutes. Remove from the heat. Using a hand-held blender, cream the horseradish until smooth. Spoon the horseradish in a clear small bowl.

I have looked for recipes for my homegrown horseradish since no one in the family could remember how Grandpa made his. This really make a smooth and versatile relish that can be used right out of the tub or in any favorite sauce. You can even add beet juice if you like a little color! Thanks Emeril!
