I had to make dinner one night for my mom and dad. I had never made meat before and this is what we had to cook. So I looked on food network to find a recipe and this one just sounded good. So I made it and my parents said it was amazing.
It was very easy to make and the spices and everything made it even better.
I have a lot of expierance cooking but not meat. I have been told that i should be a chef. Even if you are not the best cook this is not hard to make and I think anyone can do this one.

I made this for Christmas dinner. It got rave reviews from everyone. It produced little to no drippings so if you want au jus or gravy you will need to make that separately. I served mine with a homemade horseradish sauce which was great with this.

Though the meat was done perfectly (25 min. per lb. for medium, I did not care for the Essence rub. But that is my fault, since I didn't realize the recipe was CREOLE! Everyone said it was good buttoo SPICY! (DUH! cayenne will do that! Next time, I will do this recipe without the "creole" seasoning. Try Emeril's other prime rib roast with just the garlic and salt, much better.

Melt in your mouth is an understatment! To here lips smacking while your guess eats is enough bragging rights for a week.
