I just added a bit if mustard and fresh basil leaves which gave it a really nice flavor.
I also was out of mozzarella cheese and had to substitute with muenster which made this sandwich perfect.

Made this at home and the next day for the guys at work and it was officially voted the best panini they ever had. Says a lot since one of the guys is a fireman and paninis are a staple at their firehouse. Skipped the onion but wish I would have sliced it thinly and added it...next time.

Made these tonight based on the Magazine article. Followed directions precisely. I was kind of worried about the red peppers as I am not a HUGE fan of peppers. But actually, they were delicious on this sandwhich. All the flavors blended very well together. It was a lot of prep for a grilled cheese sandwich, but they were very very tasty. Thanks!

We LOVE a great sandwich in our house! Tried this one for lunch today & loved every bite. Ciabatta is our first choice for a sandwich, but not so much for this recipe. Best when cut length wise, so the 1/2 inch slices weren't the easiest to work with. Will add this to my recipe book! Will make sure to use slices of fresh mozzarella and a different style of rustic bread. In the event that you can't find prosciutto, thin deli ham could work in a pinch.
