Ingredients
- 10 paper-thin slices of prosciutto
- 10 sea scallops
- 1 tablespoon olive oil
- 2 tablespoons Essence, recipe follows
Directions
Preheat the grill. Season each scallop with olive oil and Essence. Grill each scallop for 2 to 3 minutes on each side. Remove from the grill and allow to cool. Wrap the sides of each scallop with the prosciutto.
Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
Combine all ingredients thoroughly. Yield: 2/3 cup

Be sure to only use 2 tablesoops of the essence - NOT THE 2/3 CUPS OF ESSENCES PREPARED IN THE RECIPE!
had to scrap off all of the spices just to get a bite of the scallop!
Love it otherwise...
BTW...if using medium sized scallops...back off on cooking time...unless you like chewing rubber!
