We served this at a new year's eve party and it was great. Everybody raved about it. I did modify the dish in two ways. I used spinach instead of watercress and I doubled the amount of scallops. We will definitely do this again.

Shape the dough into looking like a fish and then cut circles out to place on top to make it look like scales. Very cool presentation.

I made this recipe using Alaskan sockeye salmon and it was so good I didnt want to send it out to our guests. I've used this recipe for buffet suppers and it is great.
