    I tried to make this recipe and determined that in order to fit in an 11-cup food processor you need to half the recipe. Beware.

    I made this for thanksgiving and it was a hit. I used gingersnaps instead of the vanilla wafers for a bit more spike. It really doesn't need the burbon whipped cream. We used regular and it was perfect. Enjoy!

    This is an elegant yet easy delicacy to prepare but missing one important element...the flavor! Cheesecake texture is sometimes difficult to acheive but Emeril perfected the art with this recipe. It is however lacking in pumpkin flavor and more so in sweetness. The chocolate sauce is divine but overpowering making it difficult to get the "hint" of pumpkin that is there. I would add just a bit more sugar and an array of spices in order to really get that pumpkin flavor. Otherwise, another hit from the master!

    I added a pecan crumble topping to this cheesecake, which made all the difference. I took the advice and added more spice, which was more cinnamon, nutmeg, and pumpkin spice. I still believe I could have added even more. Texture turned out fantastic...Good recipe but could use a little extra touches!

    My girlfriend from work makes this Cheesecake around the holiday every year...it's so good I'll have to thrill my own family with it.

    She substitutes the Bourbon Cream with a nice Cinnamon Cream...it's fabulous!!!

    This is so delectable, your family will love it!!!

    I have tried several pumpkin cheesecake recipes, but this is by far the best. Not only is it fairly easy, it's fun too. I got so many compliments on it last Thanksgiving, that I had several people ask me to make them one this year.
