This was very good, I was suprised! I didn't have any problems getting buttercup squash, I found them at our local orchard that has pick your own pumpkins. So you may be able to find them at a place like that near you. If you can't they taste like butternut squash just not quite as sweet.
We skipped the cream since it doesn't say when to put it in. It didn't need it either!

It sounds delicious, and I could probably figure it out myself, but just to be sure, please advise when and what to do with the cream, and, it reads, "return ...to butter"...what should that really say...

I love this soup on a cold winter day, which i know a lot about being Canadian. Smooth and savory and sweet and buttery.

This is a great soup. So flavorful and full of body. I did not see a place to add the heavy cream in the recipe, so I didn't use it, and it still tasted fine. I also could not find a Buttercup squash, so I used butternut. Then, I sprinkled a bit of blue cheese on top and it was marvelous.

this soup is amazing. so much flavor packed into what is normally a one trick pony. im sure there are other vairations on this soup that would make this recipe even better but doing it pretty much straight up was great. finding buttercup squash was difficult so an additional butternut was used.

This soup is delicious. I did make a few changes, but it turned out wonderfully! I omitted the parsnips and only used 2 cloves of garlic. I also omitted the second cup of wine. After baking the veggies I discarded the garlic and onion prior to making the puree. I also omitted the spaghetti squash topping and used sour cream as my topping. I did add freshly grated nutmeg, a small amount of brown sugar, and ground ginger to taste. The soup was a big hit with my family! We will make this one again! :
