    This is very good, but I used cornish hens, added chopped shrimp and I also used chicken stock instead of water. This is so yummy.

    The directions for this receipe was so simple and easy. We added chopped shrimp to the dressing. Can anyone say "Oh, my gosh!" My husband loved it. He said it was the best thing I've ever cooked; over my stuff flounder and taco ring. Can't wait to try more of Emeril's receipes.

    Flavor was wonderful. I used cornish hens as couldn't get quail here in northern ohio. It's easier if make cornbread the day before. I spilt the hens like the recipe but next time am going to stuff them.
