    Love this recipe. I would like to add that I used a store-bought Marie Callendar's crust and it was amazing. Everyone who tasted this quiche loved it and asked if I'd actually made the crust by hand.

    This quiche is wonderful! The first time I made it exactly as the recipe stated & it was fabulous. Since then I've played with the ingredients & had great success. But you need to take the extra time & make your own crust. A Pillsbury or any other pre-made one is not the same & will not do!! The crust is rich & buttery & adds to the overall flavor of the dish.

    I've been eating them my entire life (I was born in France,and it is pretty close to whar I have been eating. Definitely advise to make it, I hand made the crust, it was really easy, and yummy!

    I've been looking for a basic quiche recipie to which I can add anything I'd like. This is *it*. The extra yolk made a huge difference. Use whatever meat you like and compliment the meat with the cheese. Wonderful Emeril. Thank you.

    It was very delicious, but we made a few changes in our recipe. We substituted turkey bacon for pork bacon (Pork fat still rules though, Emeril! also we used carrots and mushrooms.

    This is a great recipe...easy to make, easy to alter! I make a simple white sauce with this, and usually add various veggies! It truly is yummy!

    Probably one of the best and easiest quiche recipes you will ever make.
    Can be varied as to adds, but definately use the base . Vary the cheese, use veggies, or other meats and any combo. Roasted poblano chilis, corn and smoked jack. YUM!!

    We told them it was an omelet in a pie crust, ok to put ketchup on it. Boys needed ketchup and the girls thought it was great without.
    We did make one quiche that followed the recipe and another with artichoke dip on the bottom, topped with chopped spinach and sauteed onions, then cheese and liquid ingredients. It was great.
    The thing I like about this recipe is that it can be adapted to what is on hand.

    After reviewing a few of the top-rated quiches, I decided to try this one. I made this quiche and the Quick Quiche w/spinach (The Best Of and both my hubby and I agreed that the Quiche Lorraine came out on top! I used turkey bacon and swiss and dried nutmeg. I didn't have time to make the crust so, I used a premade one from Publix. The quiche came out perfect and had a wonderfully creamy taste. Perfect for a winter's night. Next time I will make two and freeze one!
