Instead of using the smoked sausage, I browned bacon; used the fat and oil to fry the veggies and spices and then added in left over ham I had diced.
My husband said this receipe was definitely a keeper!!!

In Texas when you see the word Red in front of the word Bean you think Pinto. Had Bush's canned Frilojes Pintos in the cabinet and some uncured bacon sausage in the freezer just waiting for this recipe. I rinsed the beans and added more broth to compensate. Ate half the recipe and put the rest on the fridge. My husband calls to ask where the recipe is to make more. He makes more and adds IT to the leftover soup, a never ending pot of bean soup. Considering the unpredictable Texas weather, you never know when you need something warm and comforting in a FLASH!

I have made this soup a couple times and loved it both times. The first time I made it exactly the same way and it was delicious. The second time I used 2 green peppers and an extra can of drained beans. It was delicious, too. The second batch I made almost had a sweet and spicy taste to it. I am thinking because of the extra bell pepper. I also love to freeze it because it thaws and reheats very well. I plan on making another batch tomorrow--it is just so good!

This recipe turned out perfect. I used turkey smoked sausage to cut down on the calories and it was rather tasty. I will be making this again.

After glancing at the ingredient list, I was afraid their was not going to be enough flavor. Boy was I wrong. Great taste from day one.
My tips-- Add the sausage back after using the stick blender, why puree all that great sausage. Rinse off the beans, on the show EL poured them straight in but I rinse first and added an additional cup of stock... Enjoy...

If you are looking for a hearty bean soup this is not the one to make. It is a very good soup but not as rich with beans and flavor for my personal taste

I watched Emeril make this and determined then and there that I had to try it. It did not disappoint! I made it as written and it was wonderful. The immersion blender at the end really thickens the soup. My husband said "Honey, this one's a keeper!"
