Made this Summer Tomato Soup recipe in the winter with ripe roma tomatoes. Needed to boost the red 'tomato-y' look with a couple of generous shots of canned ground peeled tomatoes. Nice and healthy, but the flavors were not overly complex.

I have been making this soup for the past two summers, and it still is a favorite. We have passed it on to friends, whom enjoy it as well. It is delicious cold as well, however my personal preference is room temp.

Cold-served is the way to go with this soup. Utterly refreshing. Use very ripe tomatoes. In my recipe box it goes!

This soup is absolutely fabulous. this was my first try at making tomato soup and it was soooo easy and took hardly any time at all. I tried it both hot and cold and was really surprised at the difference in taste. I plan on making several batches and freezing it so when it's the middle of winter and there are only no flavor hot house tomatoes around I can enjoy this terrific soup.

I like this soup, it was a fantastic use of the abundant crop of summer tomatoes; but it did need a little extra flavor for my taste.
