    I made these on 4 different occasions already. They were perfect as Christmas gifts. Chambrod gives the jam just fantastic taste. The lemony taste goes so well with raspberries. 1 inch balls turned out to be too big (IMHO so I make them a little smaller. The secret is to "beat just until moist clumps form." Not a tad longer. And when you make the balls, don't make them too smooth, keep them somewhat messy so the butter will still be "chunky". This is a winner!

    These are oh so easy! I had all of the ingredients in my kitchen except the Chambord and raspberry jam. However,I substituted orange liqeuer and some homemade blueberry preserves and they turned out great!!

    Bake exactly 20 minutes; cookies got raves from all family members. I used lemon curd for filling. It really gave them a lemon flavor. We call them Lemoney Snickettes!

    I whipped up a batch of these cookies for my hubby. He wanted to take them in to his office to share with his co-workers for the holidays. Well, I was so surprised how quick and easy these cookies are to make. They cooked up so nicely that they actually looked like I purchased them at a bakery! The taste is awesome as well. That lemony, buttery flavor just melts in your mouth. My cookies only took 13 minutes to cook, and I used raspberry as well as apricot preserves to add a little variety. I even included some sugar-free raspberry jam, and those came out delicious as well. I definitely recommend this recipe to any cookie newbie, as I don't have much experience myself with baking. My previous attempts with other recipes pretty much flopped or were not that good for the effort. These baked up beautifully and were delicious! What more can you ask for? A cookie that's easy to make, looks beautiful and tastes great! Thanks Emeril!

    These are awesome cookies! Instead of using chambord (too expensive I bought a U.S. raspberry liquor and they still came out very tasty. They don't take long to make and you can easily double the recipe to make a huge batch if you want. I made the balls slightly smaller than an inch and that was perfect.
