    So easy! Perfect with all the late summer fresh vegetables! Our favorite is with grilled chicken & homemade biscuits.

    Wonderful dish when you have really good fresh vegetables available. Only use FRESH tomatoes (peeled and seeded!! and FRESH herbs. The texture is perfect and not mushy like most ratatouille recipes I've tried. I added red pepper flakes for heat although that's only for our household's particular taste.

    I love the fresh veggies. However, the dish was bland. Could be because I used canned tomatoes, and dried parsley, basil, and thyme. I did add extra. Or could be that I like more flavor.

    This was a wonderfully simple and quick ratatouille. I've been making the ratatouille recipe from the movie of the same name, which takes over 2 hours and turns out just as good as this one!! I'll be making this one more from now on!

    It was so easy to make and so delicious. I added a little red pepper flake and some artichoke hearts and served with fresh baked bread..mouth watering

    This may take 22 minutes to cook but it took a good 20 minutes to chop everything up. I didn't dice everything perfectly but it cooked up fine and I think the zucchini can go in a little sooner. I added in some Cajun spices when I added the salt. It adds a nice flavor kick to the usual French ratatouille taste.

    I made this for my family and they loved it. They swear that the best part is using the leftovers in omelettes the next day! Since I made it a few weeks ago, I have gotten repeated requests to make it again.

    i felt as though a little rat was in my hair telling me what to do....great recipe!!!!!! even my kids loved it...they ate this while watching the movie.....
