    Fantastic!

    One of the few recipes that I was able to make exactly as written and didn't need to tweak for taste. Definitely a keeper and something I will make again.

    This soup is unreal. I made a few changes - no ham hock, and right before I was going to puree I tasted it and it was just perfect so I left it alone...didn't puree and omitted the sherry, parsley, rice and scallions. Also I added some chopped celery with the onion and a bunch of kale to add some greens and nutrients. It was absolutely amazing, will DEFINITELY make again and again!

    THIS RECIPE WAS WAY TO SALTY! I WONDER IF THE ESSENCE (EMERIL'S CREOLE SEASONING WAS A MISTAKE WHEN IT CALLED FOR 2 TABLESPOONS OF SALT?

    This recipe was fast, easy, and delicious! If you've ever been intimidated about making real cajun food, this dish is for you!! Thanks Emeril. I no longer have to go to Popeye's to get a quick fix of red beans!!

    Soup was absolutely delicious. I used 1 tsp. "Essence" instead of 1 Tblsp and made it with Hillshire's Polka Kielbasa and diced ham instead of the sausage it called for. I used a 1/3 tin measuring cup as a mold, tamped down my cooked rice, turned the tin over and dropped my rice in middle of each individual soup bowl. Garnished with some parsley. It looked wonderful and it tasted superb!

    IT TASTE VERY GOOD!! THOUGH I DIDN'T DO IT EXACTLY AS RECEPIE FALLOS, I DID NOT PUT THE AUNOULL (SAUSAGE, I USED UNDRAINED ROMAN CAN RED BEANS AND I USED TURKEY SMOKED HAM INSTEAD. BUT THE FLAVOR WAS DELISIOS, A LITTLE SPYCY BECAUSE OF CAYANNE PEPER (ESSENCE, BUT OVERALL GREAT SMOKY TASTE..
