Ingredients

  • 1 1/2 cups pecans
  • 1 cup semisweet chocolate chips
  • 1 unbaked 9-inch pie shell
  • 4 eggs, beaten
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1/2 cup corn syrup
  • 1/2 teaspoon vanilla extract
  • Pinch salt
  • Caramel Sauce, for garnish, recipe follows
  • Confectioners' sugar, for garnish

Directions

Preheat the oven to 375 degrees F.

Spread the pecan pieces and the chocolate chips evenly on the bottom of the pie shell.

In a mixing bowl, whisk the remaining ingredients together. Pour the filling over the pecans. Bake until the filling sets, 50 to 60 minutes. Remove from the oven and cool for 30 minutes before slicing. Cut into individual servings and serve with a drizzle of Caramel Sauce and sprinkle with confectioners' sugar.

Caramel Sauce:

  • 3/4 cup sugar
  • 2 tablespoons water
  • 1/2 teaspoon fresh lemon juice
  • 1/2 cup heavy cream
  • 2 tablespoons to 1/4 cup whole milk

Combine the sugar, water, and lemon juice in a medium heavy saucepan and cook over medium-high heat, stirring, until the sugar dissolves. Let boil without stirring until the mixture becomes a deep amber color, 2 to 3 minutes, watching closely so it doesn't burn. Add the cream (be careful; it will bubble up), whisk to combine, and remove from the heat.

Add 2 tablespoons of the milk, then add up to 2 more tablespoons, until the desired consistency is reached. Let cool until just warm before serving. (The sauce will thicken as it cools.)

    I have made this pie numerous times and it has been a hit every where I have taken it. I plan to make it again as one of my... desserts for Easter as well. The comments about the crust browning are true and I am going to try the tip of placing foil over the crusts edges and take it off towards the end. I made the sauce once for it and actually forgot to serve it with the pie when it was time. Turns out the pie is delicious without it, its better to have a scoop of vanilla ice cream with it in my opinion. Thanks Emeril!Read more

    Concerned that it may be too sweet, I used 1/2 cup chocolate, and used unsweetened dark bakers chocolate. This was a great... help, as the pie was definitely not too sweet. I added in 2 tbs of bourbon in the mix, and also a shot of bourbon to the caramel sauce. This was more an "adult" chocolate pecan pie. :) The bourbon also helped cut the sweet. I should have put a layer of salt crystals on the top of the pie, I think it would have added a great compliment to the dessert. Next time! The ratio of pecans to goo was perfect. Another chocolate pecan pie recipe I was eying had more corn syrup, egg yolks, and added in melted butter. I'll have to try that one and see which is better.Read more

    Great pie, need one extra step to save the crust

    I have made this pie a few times and have found, like other reviewers, that the crust darkens very quickly and almost looks... burned by the time the pie is done. I use a deep-dish crust and then I put the pie on a foil-lined pan. I fold foil around the crust and then just take it off for the last 10 minutes of baking. This prevents it from getting too dark and also catches any filling that might bubble over in the cooking process. Enjoy!Read more

    I made this last thanksgiving for my in-laws. The grandfather who loves peacan pie gave me very good reviews for this... dessert. The rest of the family loved it as well.
