    This was the best! I love risotto and order it in restaurants often but never have made at home since it always seems to be mushroomed based and my husband won't eat anything that even has remote flavor of mushrooms. I wanted to make risotto at home and searched for a recipe with no mushrooms. This is perfect, rich and beefy tasting, my husband had seconds! I can't wait to make it again and next time I'll make it with the Osso Bucco.

    Surprisingly easy, this risotto rocks! We like to use Chicken stock instead of beef stock because we like that flavor better. This is well worth all of the stirring!!

    Spectacular recipe. You'll find Saffron in your supermarket Ethnic area as well as Pancetta in the Deli section.

    TRY to get these ingredients as it makes all the difference.

    This was an easy recipe to follow and loved by all. The only thing I did differently was double the pancetta. Very good indeed!

    I have made this risotto today the first time and it was delicious and for a risotto first timer, simple enough to do. I did have to substitute a few items, like bacon for the pancetta and i did not have safran in the house. But it was creamy and good tasting. Very pleasing to the palate.

    I halfed this recipe on the first try and added the broth gradually rather than all at once... I don't know if this made a difference, but it was so creamy and flavourful! I will be making this for guests in the near future.
