A showstopper for Christmas! The flavors in this dish are out-of-this world. The goose was tender, the Brandy Cranberry Reduction was perfect, and the Apple Cider Onions were like nothing my family had ever had! A complete hit all the way around!

My family loved this! It was our first time eating goose and we were all afraid of the goose being too "fatty". But a lot of the fat came off during the cooking. The meat was succulent and delicious, not gamey at all actually. My mother who had been very reluctant said she wants to have this from now on every Christmas instead of turkey.

The Goose was delicious, sweet not greesy and the gravy had amazing flavor. The onions were a great balance with the meat and gravy. My only change was to the gravy, fresh frozen cranberries instead of dried. The goose fat and brandy made the gravy perfectly sweet enough, perfectly balanced.
