This was perfect,I did not make the roast tho.I just wanted the puddings and this was very easy and tasty.My little jack russell ate a whole one by himself and won't leave front of the stove.He wants more.I also made the essence to go in my chicken/gravy dish.It was all delicious.Thanks Emeril.

Good stuff! My roast was boneless, 4.875 lbs. I cut 15 minutes off each end of the cooktime for the beef and it came out med/med-rare...so watch your cook time. And for anyone who doesn't know/appreciate yorkshire pudding....here's the deal: "pudding" is a misnomer for us americans. it's like if a biscuit mated with custard. it's savory. it's awasome. enjoy.

I did not make the Yorkshire Pudding, but as far as the roast goes, this was a very easy roast recipe that did not require searing on the stovetop. The wet rub added tons of flavor, as did the garlic. Cooking times and temperature were spot on. I would make this again!

Used a different recipe (Tyler Florence for the Yorkshire Pudding.
The roast came out beautifully..A great success.

Loved the meat, even though I didn't have everything required for the Essence and had to improvise. Very spicy, very juicy.
Wasn't a big fan of the pudding. Also, was a little confused about how to prepare it.

I used this recipe for the first roast I ever made. Despite the hours that go into making the dish, it is well worth your time and not at all diffecult or too daunting a meal to make. I highly reccommend trying this recipe!
