    I'm surprised there's only one other review for this dish, as it was outstanding and should not be overlooked. My husband had roasted a turkey over the weekend and this was a delicious use of leftovers. We made it exactly as the recipe was written, sans the chives which we didn't have, and topped it with fresh eggs from a friend's hen. Heavenly.

    This is a great alternative to the typical russet or golden potato hash. It is certainly sweeter, but not to much so. Also, it is LOW GLYCEMIC, so my wife who is a cancer survivor can eat all she wants!!!
