Ingredients
- 1 tablespoon olive oil
- 4 ounces tasso or other smoked ham, finely diced
- 2 tablespoons minced shallots
- 2 pounds asparagus, trimmed
- Salt and freshly ground black pepper
- Parmesan shavings
Directions
Preheat the oven to 450 degrees F.
In a large skillet, heat the oil over medium-high heat. Add the tasso and cook, stirring constantly, until browned, 2 to 3 minutes. Add the shallots and cook until just softened, about 1 minute. Add the asparagus and toss to coat. Remove from the heat and season with salt and pepper, to taste. Transfer to a roasting pan or baking dish.
Roast asparagus until crisp tender, turning occasionally, 15 to 20 minutes. Remove from the oven and top with Parmesan shavings. Serve warm.

This dish was a definite winner with my family. The flavor and crunchiness of the ham and shallots paired perfectly with the crisp roasted asparagus. We love asparagus and I am always looking for new ways to use it. Thanks for a great recipe!

This recipie is divine! Even my in-laws love it, and they don't like asparagus. It is easy to do, and gives a really nice flavor- so much better than just steaming them in the microwave!! I never could find "Tasso" so I have used leftover ham, smoked ham lunchmeat and those ham steaks. All of them work just fine.

I love asparagus and this simple recipe added so much to the flavor. My husband, who hates asparagus, likes this recipe! I made it for Thanksgiving the last two years and I'm making it for Christmas this year. It is sure to please!!
