Perfect recipe just as written! Basil also works as a substitute for tarragon, and white wine vinegar or white balsamic vinegar substitutes well, too.

Excellent recipe! Cut the beets and carrots up a little smaller, and roasted them all together in cast iron on the grill first! Didn't have fresh tarragon, so just used fresh herbs from the garden...whirled it all in the food processor, and made a perfect vinagrette dressing, enough for another batch. Would highly recommend!!
