Made this last night. It was very tasty but a wee bit bland until I added a bit of Ponzu halfway through and then a bit more when i added the green beans. Then light citrus flavor in the ponzu really went well with the fennel flavors. I decided to roast the green beans on top of the fennel for the last 20min, as MelissaGT suggested, instead of blanching them. I just sprinkled a bit more olive oil, salt and pepper and ponzu on them. They picked up the flavor of the fennel and were quite tasty. A really great way to make fennel!

I love this recipe. The onions and fennel roasted together have an outstanding taste. The green beans would have tasted great also if they had been cooked longer. They were too crisp and undercooked. Adding them to the onions and fennel to roast with about 20 minutes left, would have been perfect. I will make again.

Excellent recipe ... a show focused on diabetic recipes (there are 19 million in the USA would be a winner. I've made many of your recipes and have not found any that I didn't like. Wonderful show, I rank it right up there with "The Tonight Show" with Jay Leno. If fact, Emeril Live is "The Tongith Show" of the Food Network. A well defined and executed format ...

Having cooked a few times with fennel, I tried this recipe for our Thanksgiving dinner and received raves reviews. All loved the taste! This had to be the easiest dish to fix.

    Thanks
