Roasted Tomatillo Salsa

Ingredients

  • 1 pound tomatillos, husked and rinsed
  • 6 cloves garlic, unpeeled
  • 1 small onion, cut into quarters
  • 1 1/2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1 jalapeno, stemmed, seeded, and minced
  • 1 lemon, juiced
  • 1 lime, juiced

Directions

Preheat the oven to 400 degrees F.

Place the tomatillos, garlic and onion on a baking sheet. Drizzle the vegetables with the olive oil. Season with salt and pepper. Roast the vegetables in the oven until browned and softened, about 15 to 20 minutes. Remove the vegetables from the oven and place the tomatillos and onion in a food processor. Squeeze the garlic cloves out of their peels into the food processor. Add the jalapeno, juice of 1 lemon and lime to the vegetables. Pulse until the mixture is fully incorporated but not pureed. Season the salsa with salt and pepper, to taste, and set aside.

    Easy - no need to buy this in the market!

    Tomatillos are cheap - even in MN. Easy recipe, very flavorful. I make batches for gifts, also a big hit at my Cinco de... Mayo party. If you have too much liquid after roasting, pull the vegetables out with a slotted spoon to blend, take the liquid and boil it down - intensifies the flavor. Add the liquid back in as needed to balance out the citrus. Also I always use grated rind of limes and lemons when using the juice. Additionally if you want to serve with home made chips, take some authentic tortillas, quarter them, place them on a baking sheet that has been coated generously with olive oil, be sure each side of each tortilla quarter has some olive oil on it, sprinkle with salt and bake in the 400 degree oven you already have going. Turn the chips after about 5-7 minutes, flip each chip, bake for another 2 or so and your good to go. Serve with the Roasted Tomatillo Salsa!Read more

    This tomatillo salsa is the best I have had! Choose ripe tomatillos for a natural sweetness that pairs well with the roasted... garlic and onion. Perfect on Carnitas burritos (great with pork) or blue corn chips! I added cilantro, too...and I wouldn't do it without.Read more

    This recipe is great! And, I don't think it's intermediate level... I made it quickly one night after coming home from work... for a nice twist to our "taco night". My husband loved it! I did add cilantro to the mix just prior to blending as cilantro is a true southwestern flavor. I'm from TX and love southwestern food -- this is a total recommend!!!!Read more
