Ingredients

  • 2 pounds small red bliss potatoes, quartered
  • 2 tablespoons chopped rosemary
  • 1 tablespoon chopped garlic
  • Salt and 1/2 tablespoon coarse-cracked black pepper
  • 1/2 cup olive oil

Directions

In a large pot of boiling, salted water cook potatoes until just tender; drain well. In a large bowl toss potatoes with remaining ingredients. Transfer to a baking sheet and roast at 375 degrees F for 25 minutes until browned and fragrant. Serve with leg of lamb.

    So I loved it. I added some onion to it as well for some extra flavor and a little more garlic. Since I love both it made it all the better for me. But the one thing I didn't do was use fresh rosemary. They just didn't have any at the grocery store so I had to make do with the dried rosemary. BUT since it tasted perfect like that, I know that had I used fresh rosemary it would have been beyond fantastic. Will use this one again for sure.
