Ingredients

  • 1 cup walnuts
  • 2 cups crushed vanilla wafers
  • 1 cup powdered sugar, plus extra for rolling
  • 1 to 2 tablespoons golden rum

Directions

In a food processor combine walnuts, vanilla wafers and 1 cup of the powdered sugar; pulse several times to mix well. Add rum, a little at a time, just until moistened and it forms a soft pliable dough. Turn out dough onto work surface lightly dusted with confectioners' sugar. Dust your hands lightly with confectioners' sugar, pull off walnut-sized pieces and roll them between your palms to form compact balls. Roll again in confectioner's sugar to coat.

    I just made these and they are great! I'll probalby make them again in about a week - they look and taste great, and are... super easy to make. I took the suggestion from the previous posts and added 4 TBS rum (golden) and a little corn syrup to get them to stick together. Great last minute treat to bring to a party.Read more

    My mom made these every Xmas since I can remember, but she wants to give that task over to me. However, she couldn't find... the recipe. I thought this one looked easy and yummy, and it was! I also added more rum. I'm surprised that Emeril only wanted me to put a few drops in. What's that about?! Anyhoo, I also added a little nutmeg and vanilla. LOVE these!Read more

    Not as easy as it sounded

    I thought this recipe looked like an easy recipe for rum balls. First of all the ingredients wouldn't come together as a... dough at all. I ened up adding twice the amount of rum to even get a hint of a rum smell and also added dark corn syrup to get to it stick together at all. I still ended up scooping the dough crumbles up with a tablespoon and firmly compessing it in my hand to get it to form a ball. The taste after adding the additional rum and corn suryp was pretty good and I'm sure this is easier than some of the other recipes out there. I think net time I'll try a different one.Read more

    my first attempt ever at rum balls & they turned out fantastic. our guests, as well as my husband and i, could not stay away... from them. i made two changes though... one being that i used spiced rum (because that's what i had) and the other being that i added a little more than what the recipe called for. the mixture seemed a little dry without the extra. skip the lengthy recipes using kitchen spices & try the spiced rum instead. you won't be disappointed. i'm making more tomorrow for gifts (and for us too)!Read more
