These are the tastiest and easiest Rum balls I have ever made! I always run out during the Holidays and get requests for more!

These were a hit all through the holiday season. Have to be careful though, they have a strong rum flavor and tend to get stronger the longer they sit. Not that I mind.

I used coconut rum (Parrot Bay instead of dark rum and they were awesome! Also used dark karo syrup because I had it on hand. Will definitly make again!

I whipped a batch of these up last week and I thought the recipe worked perfectly as written. They're a great consistency to roll after chilling, and because they weren't very sticky--just sticky enough to stay together, not all over me-- it took much less time than I expected to get these done. A friend stopped over and naturally, I offered her one. She was very impressed! She and her sorority used to sell rum balls as a fund raiser in college and she said these blew that other recipe out of the water. I think they've got a great flavor--nice and rummy without being overpowering. So, since they're easy and fun to make, they'll be on my gift plates for neighbors, sent to some Marines, etc., and I will also alter the recipe to see if it will turn out well with no nuts and more vanilla wafers for my friends and family who can't eat nuts.

Thanks, Emeril, for a recipe that will be well loved!

They taste very good but I found that they soften very quickly while rolling them up. But they are very great for the chocaholic & rum lovers out there. Easy method.

Very good rum balls. Lots of rum flavor. Next I want to try the recipe substituting pecans and bourbon.
