My family and I really enjoyed this. I had the Mexican kind of chorizo which I believe is the wrong one for this dish. In an effort to make do I cooked the 12 oz chorizo till it was basically liquid and then strained it. There was not much left and it was quite soft but it did taste very good with the rice and other ingredients. I also added a cup of tiny scallops with the peas for kicks and it was great.

This is a really great side for any dish. I would even recommend it as an option for a barbecue. It's not overwhelming in flavor, but would complement any meat well. Makes a ton, too!

It was so good. I added some additional spices such as adobo to give it a little spice. I will defintely make this again. I heart you Emeril.

    Dear Emeril,
I saw an Emeril Live Show in early December where you were making gift baskets from Chelsea Market. Anyways, one of the gift baskets had everything Asian and there was a beautiful light blue Asian plate with white flowers on it. I would love to buy those dishes. Can you tell me where to go on the internet to buy them. There is nothing like in Dallas, Texas. I love your show and love the way you cook. If I could go back to school all over again I would have been a chef. How blessed you are to have your own tv show. Thank you for all your shows. Even my 5 yr. old son loves your show. We got him the Emeril apron and cooking utensils. Even though it's too late for me to be a top chef I am going to start my kids out young cooking. I have 3 kids. I watch Food network everyday and cook at least one new meal a week.
    Thanks for being so motivating.

The rice overall was very bland, not what I expected with chorizo in it. The saffron was the primary flavor and while nice, it just got repetitive after a few bites. For a somewhat pricey side dish I would recommend something else.
