I loved the freshness of this recipe. I wonder if you peeled the white asparagus, as that's usually required to remove the bitterness?

I really enjoyed this salad, even though my poor grocery store did not have some of the main ingredients. I used green asparagus, a gourmet blend of mushrooms, red wine vinegar and good red wine (mmmmmm! i also chose to use a variety of heirloom tomatoes, various colours my personal favourite! i also used shallots instead of garlic. quite a bit different i know but still delicious! thank you for some inspiration for a wonderful dinner with my loved one! i love the food network! xox
