    This stuffing was very good, but I agree that 1 pound of Italian sausage would be sufficient. I also used prepared chestnuts that I bought online to save time. My husband liked all of the sausage, but I like the more traditional stuffing taste.

    I made this recipe for Christmas dinner, without any changes, and it was superb. I had never roasted chestnuts before, and found that peeling them was a bit more challenging than expected. The only change that I will make next time is to use 1 lb of Italian sausage as opposed to 1.5. The bread was so beautifully flavored that it needn't be overpowered by quite so much sausgage. Highly recommend this recipe!

    Sweet fennel sausage is basically sweet Italian sausage...it has fennel in it. You can get both of these items at any Shop Rite, Kings, or Whole Foods. Hope you have a great day!! emeril...you rock!

    I have read your reviews as well as the recipe & I am anxious
    to try it this Thanksgiving. Can someone tell where they were able to find the roasted peeled chestnuts & fennel sausage? I am in the northeast part of NJ & was wondering if maybe Whole Foods would carry these products.

    Everbody loved this stuffing so much it has become a holiday favorite, for christmas as well! Roasting chesnuts properly is very tricky, I did my own the first few times, then switched to prepared chesnuts. The quality is uniform and it really cuts down on the prep time needed to make this stuffing. They can be expensive, I found whole roasted and peeled chesnuts packed in foil bags as a snack the best type to use.

    I made this for Thanks giving and it was fantastic. . everyone simply Loved it. . .A must must try recipe .. The only thing I did was spiced it up with lots of red perrper flakes cause my family love everything HOT .. .Believe me. . there was just a little bit of stuffing remaining after our meal and in the night all everyone wated was nothing becides the stuffing . .

    This is an awesome recipe! I did have to go to a specialty shop for a few items but it was well worth it! My husband LOVED, as did everyone else, and he has requested that it be on the table every holiday from here on out!

    This is one savory dressing with rich complex flavor. The spices all interact with the nutty flavor of the chestnuts and goes well with the ultimate Thanksgiving feast.
