    So...these crepes were to die for. I did make some adjustments due to personal tastes and cost: omit the ham, substitute broccoli for mushrooms, and use white cheddar instead of gruyere cheese. Definitely worth the time you have to put into these.

    Dear Emeril, I must say how great your show is and this recipe was really Bam! up several notches. was easy to prepare and the smell was wonderful it filled my kitchen. the taste was out of this world, my husband really like it too and that is saying a lot for her usually is a meat and potatoe man.
    thanks for all you share with us who love to cook.

    i've tried so many different crepe recipes and this one, by far, is THE BEST. felt like i was back in france. very easy, too
